A Happy & Healthy Halloween Night Feast

October 3, 2013 by Amy Clark

Halloween is just around the corner and this year Kenmore has you covered with an easy Halloween dish and treat that you can enjoy with your family before or after your trick-or-treating has begun. That’s right, there is no need to order a pizza or stress out about festive snacks, at least not this year!  This year I am sharing an easy slow cooker recipe idea and a treat that is not only healthy, but also a festive addition to your dinner offerings!

When it comes to dinners on busy weeknights and holidays, I am always thankful for my slow cooker.  What did mothers do before this invention?  For a nod to the season, I created this easy Pumpkin Chili that could be served on Halloween night.

Pumpkin and chili might not sound like they go together, but I guarantee after eating one bowl of this, you will be hooked on this recipe.  The pumpkin adds a bit of thickness to the chili, but you honestly won’t taste it. No, the real hint that something is different in this pot of chili is the addition of pumpkin pie spice.  It adds a depth of flavor to it unlike any other bowl of chili I have eaten and it creates a beautiful aroma in your house while it is bubbling away.

Entertaining for Halloween night? No problem! This dish can be doubled for a big crowd on and would be perfectly paired with a Chili Toppings Bar if you are entertaining. Consider laying out a variety of fun toppings like different cheeses, sour cream, onions, hot sauce, and different types of crackers to allow everyone to create their own perfect bowl of chili. On chilly Halloween nights, a dish like this will warm everyone up!

Simply purchase a package of googly eyes at your local craft store and decorate a bag of apples with these eyes. To add variation to them, look for packages that offer different sizes and position the eyes in different ways with your child. Surprise your children with a  bowl full of these. These apples were a hit over here and got both my kids giggling!

I hope you have the happiest of Halloweens and I hope this dinner and treat inspire your evening festivities with your friends and family!
