Cauliflower and Kale Bites

I am always looking for delicious kid-friendly recipes as well as recipes great for entertaining. This recipe for Cauliflower and Kale Bites is just that! Taking fresh cauliflower and kale and mixing it up with breadcrumbs, eggs and cheese make tasty treats perfect for a gathering, an after-school snack and even a side with a meal. You can mix this up with broccoli instead or using other leafy greens and other vegetables. Make it your own!

ingredients

1 head of cauliflower blanched and diced

2 cup blanched kale chopped

2 cup breadcrumbs

1 large egg

6 ounces monterey jack cheese shredded

2 teaspoons kosher salt

Step 1

Heat the oven to 375 degrees.

Step 2

In a large bowl, combine all the ingredients together with your hands, or use a stand mixer to gently combine the ingredients. Form balls out of the cauliflower and kale mixture - about 2 inches in diameter.

Step 3

Place in an oiled cookie sheet. Bake for about 30-40 minutes until golden brown. Serve.
