3.5 cup toasted almonds

4 tablespoons ground cinnamon

0.5 teaspoons gound nutmeg

1 teaspoons salt

2 cup simple syrup (1 cup sugar to 1/2 C h2o)

directions

Preheat oven to 325 degrees and put 3 cups of almonds on a sheet pan in an even layer. Cook for 15mins, rotating half way through.

While the nuts roast, make the simple syrup, place 2 cups sugar with one cup of water in a heavy saucepan. Turn heat on and cook until all sugar is completely dissolved.

Heat 2 cups of simple syrup in a shallow pot to 245 degrees. No need to stir.

Once the syrup has reached that temp add the vanilla. Mix well & then add the spices and salt. Mix well to get everything incorporated

Add almonds and make sure they are all coated evenly. Turn heat off. Stir constantly; lift the nuts away from the pot every so often to cool them. The sugar will cool and coat the almonds. Stir to make sure the nuts separate from each other. Spread out on a sheet pan to cool.
