Easy Mother’s Day Dinner Menu

It’s that time of year again where we honor our wonderful mom’s and show them how grateful we are for all the hard work they do day in and day out. This year why not celebrate her by cooking up a fantastic meal for dinner and making sure she does nothing but take time to relax and enjoy the day.

I’ve created a special Mother’s Day dinner menu that is easy to follow and with the help of the new Kenmore PRO appliance line, cooking will be a spring breeze. These step-by-step recipes are also make-ahead so there will be more time to spend cherishing moments with mom and the family. Happy Mother’s Day everyone!

French Boursin Endive Salad Bites

Ingredients:
1 (5.02oz) pkg garlic herb Boursin cheese
2-3 Tbsp. heavy cream
Fresh cracked black pepper
1 cup crushed walnuts, toasted
½ cup dried cherries
6 endive, cut lengthwise and quartered
Mint for garnish

Directions:
In a small bowl, whisk the Boursin with 2 Tbsp. of heavy cream. If it’s too thick, add in the remaining tablespoon. Cover and chill. This can be made 1-2 days ahead. When ready to serve, place endive cups on a platter and pipe Boursin mixture into base of endive. Sprinkle with walnuts, pepper, and cherries. Garnish with mint sprig. Serve.
