Grilled Teriyaki Pork and Apple Sandwich

There is nothing better than a big tasty sandwich that is easy to prepare! I have always enjoyed cooking on the grill all year round, and one particular day this summer I had leftover grilled pork chops. I thought about what flavors I like with pork chops and I put them together to make this wonderfully, different creation! I had never put cooked apples on a sandwich before, and the combination with the onions and spices add a unique flavor and texture! I love this sandwich and I’m sure I will be making it for my family as a tradition for many years to come!

ingredients

1 tablespoons Dijon mustard

3 tablespoons honey divided

1 boneless loin pork chop 1/2-inch thick

2 slices Artisan French bread 1-inch thick

1 slice Swiss cheese

1 tablespoons butter

1 medium MacIntosh apple peeled, cored and sliced

Step 1: Honey Mustard Mayonnaise

In a small bowl, combine mustard, mayonnaise, 1 tablespoon honey and cayenne pepper. Refrigerate until ready to use.

Step 2: The marinade

In a shallow bowl, combine remaining honey and soy sauce. Add pork chop, turning to coat. Refrigerate for 30 minutes to marinade.

Step 3: The grilling

Heat grill to medium. Place pork chop on the grill and cook turning once until pork chop is fully cooked, about 5 minutes on each side. During the last minute of cooking time, set French bread along the outer portion of the grill to toast. Place Swiss cheese slice on one of the toasted bread slices and allow to melt slightly.

Step 4: Prepare apples and onions

While pork chop cooks, melt butter in an 8-inch skillet over medium heat. Add apple and onion slices. Season with cinnamon, sugar, salt, pepper and parsley. Cook, stirring occasionally, until apples and onions soften, about 5 minutes.

Step 5: Sandwich assembly

Place the toasted bread slice with the melted Swiss cheese facing up on a serving plate. Cover with the pork chop, followed by the apple-onion mixture. Top with spinach. Spread mayonnaise mixture on remaining bread slice. Place mayonnaise-side-down to complete the sandwich. Cut across and enjoy!
