Happy summer, everyone! It’s that time of year to give your Kenmore stove a break for the evening and whet your appetite with some cool bites. No one really wants to feel the sweltering heat from our lovely appliances mid-summer so I’ve decided to whip up some healthy and simple recipes that only require your Kenmore blender and a couple of cooling ingredients. Entertaining your guests will be a breeze. After all, I never sweat in my kitchen I only sparkle.

Enjoy a safe and healthy summer and remember, when you cook with Kenmore, you cook with love!

Little Italy’s Antipasto Platter

Ingredients:
1 ½ lbs. Assorted Italian deli meats (Mortadella, Prosciutto, soppressata)
½ cup Peppadew peppers
Gorgonzola cheese
Parmigiano-reggiano cheese
Handful fresh, torn basil
1 jar eggplant caponata
1 French baguette, sliced

Directions:
Arrange all of the ingredients (except the bread) on a large platter and chill until ready to serve. Serve with bread.
