10 pounds Turkey

10 teaspoons salt

3 teaspoons cumin

8 teaspoons black pepper

3 teaspoons coriander

3 teaspoons clove

3 teaspoons chili

3 teaspoons cinnamon

3 teaspoons cardamom

16 ounces butter

Prepare Your Garam Masala

Toast spices (everything but turkey, salt, and butter) for 3 minutes on medium-low heat until you smell the aroma of spice. Immediately place into blender until it is in a homogeneous consistency.

Rub the Turkey

Clean the turkey. Rub turkey with salt, garam masala and butter.

Cook the Turkey

Place into oven at 350 degrees Fahrenheit and cover with aluminum foil for 2.5 hours. Baste continuously. Take foil off and cook for 30 more minutes. Verify that the internal temperature of the Turkey is 180 degrees Fahrenheit. Let the Turkey sit for 20 minutes before serving.
