Yellow Cupcakes

"Bittersweet" Pastry Chef Mindy Gohr shares one of her favorite recipes for yellow cupcakes. The recipe comes from The Cake Bible by Rose Levy Beranbaum.

6 large egg yolks

1 cup milk

2.25 teaspoons vanilla

3 cup sifted cake flour

1.5 cup sugar

4 teaspoons baking powder

0.75 teaspoons salt

12 tablespoons butter

1 pounds butter softened

12 cup powdered sugar

0.5 cup milk

2 teaspoons vanilla

Cupcakes

In a medium bowl combine yolks, cup milk and vanilla. In a large mixing bowl combine the dry ingredients until incorporated. Add butter and remaining milk and mix on low until dry ingredients are moistened. Increase speed to medium and mix for 1 minutes. Scrape down sides and add yolk mixture in 3 batches, beating for 20 seconds after each addition. Scrape down sides. Pipe or scoop batter into prepared cupcake pan. Bake at 350 degrees until light golden brown and cupcake springs back when pressed lightly, about 25 minutes.

Vanilla Frosting

Beat butter on medium speed till light in color. Decrease speed to low and gradually add powdered sugar. Mix until butter and sugar form a very thick paste. Mix in vanilla. Gradually mix in milk until the frosting is of your desired consistency.
