Steam or microwave cauliflower until softened. Then mash using a masher until it looks like mashed potatoes. Add a small amount of butter or low calorie margarine to the mashed cauliflower and add seasonings to taste. You can use pepper, garlic or whatever seasoning you desire. It looks and tastes like mashed potatoes.
