Baked Apples with Granola

This recipe for Baked Apples with Granola bakes one of my kids’ favorite Fall fruits and topping it with granola, with a little butter and brown sugar. Adding in some cinnamon and nutmeg brings back those classic apple pie flavor but without the crust and baking in a lot less time. Adding the crunchy granola gives this healthy treat a nice play on textures – but don’t forget to top it off with some French vanilla ice cream to make it a complete dessert!

3 Fuji apples halved

1.5 cup granola

1 stick unsalted butter melted

0.5 cup brown sugar

2 teaspoons ground cinnamon

0.5 teaspoons ground nutmeg

directions

Step 1

Heat the oven to 350 degrees. Take the halved apples and core the middle, taking out the seeds and creating a scooped out center.

Step 2

In a large bowl, gently toss the granola with 5 tablespoons butter, brown sugar, cinnamon and nutmeg.

Step 3

Take the rest of the melted butter and brush the apples thoroughly with butter.

Step 4

Top the halved apples with granola. Bake in the oven for 30-35 minutes, uncovered.

Step 5

After about 35 minutes, let slightly cool and top with ice cream and/or whipped cream.
