My son gave me a Belgian waffle maker one Christmas. Each Christmas and Saturdays in between we enjoy making waffles. This bacon waffle breakfast sandwich is sure to satisfy.

- 4 slices bacon, chopped
- 1/2 pounds unsalted butter
- 8 large egg yolks
- 2 tablespoons lemon juice
- MSR 7 tabasco
- water, if needed to thin
- 1 box waffle mix, prepare as directed on the box
- 4 slices bacon, cooked, chopped
- 1 canola oil spray, to spray waffle maker
- 6 eggs
- 6 cheese cheddar, slices
- 6 slices bacon, cooked and cut in half

Cook bacon and keep the fat with the bacon Melt the butter and reserve Place egg yolks, lemon juice and Tabasco in blender and blend until smooth Pour hot bacon fat with the chopped bacon into the blender with the eggs and blend until smooth Pour butter in while blending, thin and adjust with the warm water if needed Keep warm while preparing the sandwich
making waffles, eggs and assembly
Make waffle batter (using favorite recipe or box mix) add some chopped, cooked bacon to the batter Heat waffle iron, spray and make waffles * Cook an egg sunny side up and top with a thin slice of cheddar cheese and melt the cheese Assembly: Use one fourth of the Belgian waffle as bottom. Place cooked egg and cheese on it Add slices of cooked bacon Add some bacon hollandaise Top with another waffle
