BLT Cheeseburger Soup

ingredients

  • 1 pounds ground beef
  • 1 medium onion, diced
  • 2 carrots, diced
  • 2 celery stalk, diced
  • 4 cup chicken stock
  • 1 tablespoons worcestershire sauce
  • 3 tablespoons flour
  • 3 tablespoons butter
  • 2 cup heavy cream
  • 2 cup extra sharp cheddar cheese, grated
  • 2 cup shredded iceberg lettuce
  • 1/2 pounds cooked and drained bacon
  • cherry tomatoes, sliced for garnish
  • scallions, sliced for garnish

directions

Directions:

In a large soup pot or Dutch oven, cook the ground beef and remove. Set aside. In the same pot, heat 1 tablespoon of olive oil and saute the onion, carrot, and celery for 5 minutes or until soft. Season with salt and pepper. Pour in stock, worcestershire sauce, and cooked beef. Turn heat to low and let simmer while making cheese sauce. In a large saucepan, cook the flour and butter to make a soft roux. Cook for 3 minutes then slowly whisk in heavy cream. The sauce should thicken. Add in shredded cheese 1 handful at a time while stirring. Stir until cheese is melted then remove from the heat and add to the soup mixture. Stir in iceberg lettuce. To serve, ladle soup into a bowl and top with crumbled bacon, tomatoes, and scallions for garnish. Enjoy!
