BLT Cheeseburger Soup

This recipe is loaded with all your favorite burger toppings and tastes better than the real thing! So easy to make and the kids will be begging for seconds! Happy Eating!

1 pounds ground beef

1 medium onion diced

2 carrots diced

2 celery stalk diced

4 cup chicken stock

1 tablespoons worcestershire sauce

3 tablespoons flour

3 tablespoons butter

2 cup heavy cream

2 cup extra sharp cheddar cheese grated

2 cup shredded iceberg lettuce

0.5 pounds cooked and drained bacon



In a large soup pot or Dutch oven, cook the ground beef and remove. Set aside. In the same pot, heat 1 tablespoon of olive oil and saute the onion, carrot, and celery for 5 minutes or until soft. Season with salt and pepper. Pour in stock, worcestershire sauce, and cooked beef. Turn heat to low and let simmer while making cheese sauce. In a large saucepan, cook the flour and butter to make a soft roux. Cook for 3 minutes then slowly whisk in heavy cream. The sauce should thicken. Add in shredded cheese 1 handful at a time while stirring. Stir until cheese is melted then remove from the heat and add to the soup mixture. Stir in iceberg lettuce. To serve, ladle soup into a bowl and top with crumbled bacon, tomatoes, and scallions for garnish. Enjoy!
