- 1 pounds grilled lobster tails, cut into large dice
- 1/2 pineapple, grilled and diced
- 1 mango, grilled and diced
- 1 thai red chile, minced
- 1/4 cup flat leaf parsley, minced
- 1 scallion
- 1/4 cup mayo
- 2 limes, juiced
- 1/2 english cucumber, small dice
- kosher salt and fresh cracked black pepper
- 4 hot dog buns or hawaiian rolls
- 4 leaves of bib lettuce
directions
Directions:
In a large, chilled stainless steel bowl, mix all ingredients well, making sure not to mash the lobster. Season well with salt and pepper. Toss the bread onto the grill for a couple seconds then line each hot dog bun or Hawaiian buns with a slice of lettuce and fill evenly with the lobster salad. *I'd like this served with Sweet Potato Fries sprinkled with Toasted Coconut
