Champagne and Mustard Glazed Vegetables

Every Saturday for the past six weeks, the studio turns into a magical wedding wonderland. Bridal Wave is an eight-week reality web series that helps brides to be plan the perfect wedding and showcasing the most current trends in wedding dresses, cake design, floral arrangements, and so on. Kenmore proudly sponsors each and every show and each week I take a fabulous appliance and highlight it’s strengths and make a little something special for the audience.

This week is quite special with a favorite returning guest, Debbie Lily, who has planned extravagant events for the likes of Oprah and other celebs alike. I thought it would be special to showcase the Kenmore Elite Freestanding Double Oven Range and instead of cooking up one special treat, why not make a full spread for the audience and tease all the online viewers. 2 rotisserie chickens, cauliflower mac and cheese, and my champagne and mustard glazed vegetables served with warm dinner rolls should do the trick.

Champagne and Mustard Glazed Vegetables
Ingredients:
•2 zucchini, sliced 1 inch thick
•2 yellow squash, sliced 1 inch thick
•1 red onion, sliced thick
•1 bunch asparagus
•3 tablespoons extra virgin olive oil
•1 tablespoon champagne vinegar
•2 tablespoons dijon mustard
•1 garlic clove, minced
•sea salt and cracked black pepper

Directions:
In a large ziplock bag, add all vegetables. In a bowl, whisk remaining ingredients and pour over veggies. Marinate for up to one hour. Preheat an indoor grill and grill vegetables until marked and slightly soft. Keep warm in a 200° oven. Enjoy!
