Just because you don’t have a full kitchen at your disposal doesn’t mean that you can’t get creative with your college cuisine. Check out this easy recipe for Mexican pizza prepared in a toaster oven.
Ingredients:
2 flour tortillas
Jarred salsa
Monterey jack and cheddar cheese mix
Canned black beans, washed and drained
1 cup shredded lettuce
1 Roma tomato, diced
Sour cream
2 teaspoons lime juice
Olive oil
Pinch of salt
Fresh cracked pepper
Instructions:
Preheat your Kenmore toaster oven to 350 degrees. Take your flour tortillas and spread about 1 tablespoon of salsa as the sauce. Add your cheese and 1-2 tablespoons of black beans. Bake in the oven for 5-8 minutes.
In a mixing bowl, toss together shredded lettuce, Roma tomatoes, olive oil, salt and pepper and lime juice. Top the salad mix on the cooked pizza. Drizzle sour cream. Enjoy!
