DIY Tacos: Every Day is Taco Tuesday

Taco Tuesday should be recognized as a national holiday in my opinion. Just think of how much nicer the world would be if we left work early every Tuesday to indulge in a buffet of taco-filled delights. All jokes aside, I love having taco night at my house and displaying a table of tasty ingredients to make your own tacos. The assembly is quite simple, I’ll put out homemade guacamole, salsa, meat and vegetarian filling options, cheeses, onions, and of course some homemade tacos.

If you don’t want to buy pre-packaged hard shell tacos, I have a simple method for you below that will impress your guests and be gentle on your wallet. Buying a package of corn tortillas is much more affordable than the hard shell route. Plus you can also make tortilla chips and tortilla bowls all with only one package. I’ve also included some of my favorite taco recipes that will have you wishing everyday was Taco Tuesday. Happy Eating and don’t forget to serve up the tacos with an ice-cold cerveza!

DIY Taco Shell

Wrap 4-5 corn tortillas in a damp paper towel and nuke in your Kenmore PRO microwave for 30 seconds. Carefully spray each tortilla with cooking spray and drape over 2 bars of the oven rack. Bake at *375 for 8 minutes or until crispy. Carefully remove and cool. Serve.

DIY Taco Bowl

Preheat oven to 375°F. Heat tortillas until warm. Coat each side of 4 tortillas with cooking spray. Turn a 12-cup muffin tin upside down. Nestle a tortilla in the space between 4 cups to form a “bowl.” Repeat with 3 more tortillas, making 4 bowls total. Bake until firm and beginning to brown, about 15 minutes. Transfer to a wire rack to cool. Serve.

DIY Tortilla Chips

Cut 1 package of corn tortillas into quarters. Spray a baking tray with cooking spray and line the chips on the tray. Bake at *400 for 10-12 minutes or until crispy. Remove from heat and sprinkle lightly with sea salt. Let cool and serve.
