I am always looking for healthy sides and salads that are different from the usual. This recipe for Garbanzo Bean Salad with Chili Lime Vinaigrette is nutritious, packs a lot of healthy and fresh vegetables and is a perfect accompaniment to grilled, roasted or pan fried meats, or all on its own. This is also a great topping on salad greens and even warmed up if you’re looking for a hot meal. Don’t be afraid to pack it in your lunchbox as well!

- 1 can of garbanzo beans, washed
- 2 cup cherry tomatoes, halved
- 1 cup chopped green beans
- 1 small red onion, thinly sliced
- 1 medium zucchini, diced
- 2 teaspoons kosher salt
- 2 teaspoons dried chili flakes
- 1/4 cup fresh lime juice
- 1/2 cup extra virgin olive oil
Chili Lime Vinaigrette
In a large mixing bowl, whisk together lime juice, olive oil, 1 teaspoon kosher salt and red chili flakes for Chili Lime Vinaigrette and taste for seasoning.
Take all the vegetables and gently toss together in the bowl with Chili Lime Vinairgrette, set aside at room temperature or the refrigerator for at least 15 minutes. Then serve.
