Global Grilling: Mediterranean Burgers with Roasted Red Pepper Mayo
Grilling season is in full force and burgers on the grill is as American as apple pie. But this summer, switch up your typical burger patties by adding Mediterranean flavors with feta cheese, olives and top with tzatziki sauce.
This is such a simple recipe that will be a hit at your next backyard barbecue.
Ingredients
2 pounds 70/30 ground beef
8 ounces crumbled feta cheese
2 tablespoons capers, chopped
1 cup fresh parsley, chopped
¼ cup pitted Kalamata olives, chopped
1 teaspoon red chili flakes
2 tablespoons olive oil
Kaiser rolls
Your favorite burger fixings
Roasted Red Pepper Mayonnaise
¼ cup jarred roasted red peppers (look in the Italian isle at the market)
1 ½ cups real mayonnaise
½ teaspoon salt
¼ teaspoon red pepper flakes
1 tablespoon lemon juice
Instructions
In a large mixing bowl use your hands to gently mix the ground beef with feta cheese, parsley, capers, olives, chili flakes and olive oil. Be careful not to over-mix or your burgers will become tough after grilling.
Separate the seasoned ground beef into 8 patties. You can make smaller patties, if you want. Grill to your liking.
With your Kenmore food processor or blender, take all the ingredients for the roasted red pepper mayonnaise and blend until smooth. Taste for seasoning and set aside in the fridge.
Top your burgers with roasted red pepper mayonnaise, lettuce, tomatoes, red onions and whatever fixings you like and enjoy!
