- 4 Italian sausage buns
- 2 tablespoons olive oil
- 1 large yellow onion, thinly sliced
- 1 large red bell pepper, seeds removed, thinly sliced from top to bottom
- 1 large green bell pepper, seeds removed, thinly sliced from top to bottom
- 2 teaspoons balsamic vinegar
- 2 teaspoons brown sugar
- 1/2 teaspoons fennel seeds
- 1-1/4 teaspoons kosher salt
- 4 4-inch sweet Italian sausages
- 6 ounces Fontina cheese, sliced (optional)
Wrap buns in foil and heat in at 300 degrees for 20 minutes.
Sauté Onions and Peppers
Heat oil in large heavy skillet over medium heat. Add onions and peppers; sauté until slightly softened, about 5 minutes. Add balsamic vinegar, sugar, fennel seeds and salt. Reduce heat to medium-low and sauté until onions are deep brown and tender, about 15-20 minutes, adding a little water if the bottom of the pan gets too brown.
While vegetables are cooking, use a ridged grill pan or large skillet to grill sausages over medium-high heat for 3 minutes a side; cook on all 4 sides, until cooked through.
Cut buns and spread open. Halve sausages lengthwise. Arrange 2 sausage halves in each bun. Top with caramelized onion and pepper mixture and Fontina cheese. Broil until melted and golden. Serve immediately. Makes 4 sandwiches.
Make onion-pepper mix the night before and refrigerate it until ready to use. Buy precooked sausage that only needs to be reheated.
Involve Your Kids
