We take things for granted these days such as going to the grocery store & picking up something prepared or frozen. However, home grown food, something that grandma cooked, is no match. My favorite was always Grandma’s Special Harvest Recipe. I grew up with Grandma living with us. She prepared our meals, sat with & enjoyed the family conversation. Grandma always hit home runs, but especially with this particular dish. Growing up Grandma’s Mom always used something from the depression era garden; squash & onions or sometimes added ingredients left over from lunch, such as chicken! My Grandma did the same with Grandpa’s Victory Garden, &, in later years, used what my Dad & Mom had from their rented garden space. My love for food drove me to continue to ask & learn Grandma’s secrets. With many trials trying to decode her special recipe, I think I have unlocked it. My Grandma’s cooking has inspired me to not only to compete in food contests, but Hog Calling as well. Suey!

ingredients

1 small roasted chicken

1 butternut squash

2 tablespoons orange juice

2 tablespoons butter

1 medium onion chopped

1 green pepper chopped

1 cup crackers crushed

1 egg

2 refrigerated pie crusts

2 cup mozzerella cheese

0.5 cup cream Garlic Cream Sauce

4 garlic cloves Garlic Cream Sauce

0.5 cup chicken broth Garlic Cream Sauce

1 teaspoons dijon mustard Garlic Cream Sauce

0.5 teaspoons worcestershire sauce Garlic Cream Sauce

2 tablespoons butter Garlic Cream Sauce

2 tablespoons Sherry wine Garlic Cream Sauce

0.5 cup swiss cheese Garlic Cream Sauce

0.5 cup sharp cheddar cheese Garlic Cream Sauce

2 teaspoons brown sugar Garlic Cream Sauce

2 tablespoons Flour Garlic Cream Sauce

1 teaspoons salt Garlic Cream Sauce

directions

Step 1: Garlic Butternut Squash Chicken Casserole

Roast chicken ahead of time for approximately 45-60 minutes depending on size of chicken. Then pick meat from chicken and place in a large mixing bowl.

Step 2: Garlic Butternut Squash Chicken Casserole

Cut squash in half and slice top. Coat with orange juice and butter. Cook for 70-80 minutes.

Step 3: Garlic Butternut Squash Chicken Casserole

Once squash is cooled, take out squash from skin and place with chicken. Add onion and green pepper along with crackers crumbs. Set aside.

Step 4: Garlic Butternut Squash Chicken Casserole

In a sauce pan on medium heat, add cream, garlic, broth, mustard, Worcestershire sauce, and butter. Cook for a little bit before adding sherry. Then reduce heat add cheeses while stirring (very important).

Step 5: Garlic Butternut Squash Chicken Casserole

Next, add flour, sugar, and salt. Whip very vigorously until thickens. Then add sauce to chicken mixture and stir. Then add egg and stir again.

Step 6: Garlic Butternut Squash Chicken Casserole

Cook crust in casserole dish for bottom layer, about 12 minutes. Then add chicken squash contents and top with another layer of crust. Cook for 30 minutes until crust looks golden brown. With 5 minutes remaining, top with mozzarella cheese and garnish with bell peppers. Serve with family and enjoy the conversation with Grandma!
