Marriage Contract Corn Muffins

My future husband and I met in junior high. We did not marry until after I had graduated from college. In an oral pre-marital contract, it was agreed that I would make good corn bread and he would always be responsible for dead animal removal! Oh, my goodness, I’ve used this contractual agreement over and over during the almost 39 years that we have been married! Whether it’s emptying mouse traps, moving carcasses of birds or squirrels that the outside cats have left by the back door or other disposals, this provision has served me well!

ingredients

2 cup Self Rising Yellow Corn Meal

1 cup Self Rising Flour I used Unbleached White Lily

2 sticks of melted butter

3 eggs

2 tablespoons sugar

2 cup low-fat buttermilk

One Step Muffins

Pre-heat oven to 350 degrees. Grease or spray with non-stick spray muffin pans which will hold 24 muffins ( I use 2 - 12 muffin non stick pans). Add all ingredients in a spouted mixing bowl. Stir until all ingredients are combined. Pour into muffin pans and bake for 20-25 minutes. Leave in longer if your family likes crunchy edges! I sometimes only need 12 muffins. I half all of the ingredients but include 2 eggs. My family and guests always love these, especially with chili, soup and stews!
