- 1 head of cauliflower
- 2 tablespoons butter
- 1 cup skim or 1% milk
- 1 tablespoons rosemary, chopped
- salt, to taste
- pepper, to taste

Method
Cut Cauliflower in half and take out the hard center core. Cut each half into about 8 pieces. Place cauliflower in a pot of cold, salted water. Bring the water to a boil. Once the water comes to a boil, dump the cauliflower in a strainer and let dry for about 5 minutes. Transfer cauliflower back to the pot that you boiled them in and add the butter and milk. Mash as you would potatoes for mashed potatoes, add rosemary, salt and pepper.
