Thank you to everyone who shared their most delicious healthy recipes and ideas to start the year off with a new healthy lifestyle.  The winning recipe is the Grilled Ratatouille Quinoa! It was a tough decision for our judges to make and a close tie with the other amazing dishes.

See what inspired Bobbi’s Grilled Ratatouille Quinoa recipe:

Before I started my journey down the road of healthier eating, I wouldn’t have known a whole grain if I tripped over it! But that was years ago. Now I actually prefer whole wheat pasta in many dishes because it adds a kind of nutty flavor that I really enjoy. The switch wasn’t easy at first. The rest of the family was not on board. So I actually started the switch with them on the sly. I snuck in whole grain pasta. That is probably the easiest do it if you need to be sneaky like me. I loved sitting back while the family went on about how great dinner was and then I informed them that they had just tried their first whole grain recipe. Dead silence for a minute, then a chorus of “really?”. I think that pretty much summed it up that I knew what I was doing, and wasn’t out to poison everybody. Now the family loves the whole grain substitutions that I make. This Grilled Ratatouille Quinoa is, hands down, the new family favorite!
