Momma Cuisine’s Slow Cooker Chicken Pho

Rotisserie chicken has always and will always be a staple in my house. There are so many ways to turn this delicious store-bought chicken into various meals. One thing me and my family always crave is pho. Pho is a traditional Vietnamese soup made with rice noodles, fresh basil, various vegetables all swirled around in a delicious hot broth that has been simmering for hours. Because we are making great everyday meals, I wanted to make a quick, homemade version of pho using rotisserie chicken that already has so much flavor to help infuse the broth in a shorter amount of time. Using key ingredients like star anise and fish sauce, this recipe is one that will satisfy your pho craving at home.

ingredients

3 cup pulled rotisserie chicken no skin

6 cup water up to 8 cups

2 inches of ginger sliced into rings

1 medium onion chopped

4 star anise pods

1 tablespoons fish sauce

2 chicken bouillon cubes

1 pounds wide rice noodles

Step 1

Set aside the pulled chicken and cook the noodles according to the instructions. Set aside.

Step 2

Take a large pot and add the rotisserie chicken carcass, bones, onions, ginger and star anise. Add water and bring to a boil.

Step 3

Then, add the fish sauce and chicken bouillon cubes. Cook in the your Kenmore slow cooker for at least 2 hours, 4 hours for full flavor. Taste for seasoning and add salt and pepper to taste.

Step 4

If you want this simmering all day, put everything in a large slow cooker and go off to work. Once you come home, season with salt and pepper and serve.

Step 5

Take your soup bowls and add noodles and your toppings of choice. Then ladle your delicious broth over and enjoy!
