Pork Chops with Broccolini in White Wine Butter Sauce

As we gear up to get ready for back to school (many of you  already have), the essence of my “Great Everyday Meals” motto couldn’t ring truer than during the crazy, busy school year.

As I set my alarm earlier than usual to get breakfast and my mind ready for the day ahead, get the kids to school, work all day and then get ready again for their arrival, this routine that is dinner just sounds plain exhausting!

This recipe for Pork Chops with Broccolini in White Wine and Butter Sauce sounds like a meal out of a menu page of a restaurant. You will be surprised that a “great” meal can be done with simple ingredients and basic cooking techniques.

Pork Chops w/ Broccolini in White Wine Butter Sauce


4-5 tablespoons of olive oil

4 bone-in pork chops



All-purpose flour

2 cloves of garlic – roughly chopped

1 medium Spanish onion – sliced

1/2 cup of white wine

1/2 teaspoon of thyme – dried

1/2 teaspoon of red chili flakes

1 lb of broccolini

2 tablespoons of unsalted butter


Salt and pepper each side of the pork chops and lightly coat them in flour.

Heat a large pan with olive oil on medium-high heat. Cook the pork chops – two at a time – turning the heat down to medium to avoid over-cooking, in the pan until cooked through and a crispy golden brown color. Set aside.

In the same pan, on medium heat, add the onions and garlic and saute until the onions become tender, then add the broccolini.

Add the thyme, red chili flakes and white wine. Mix thoroughly, scraping the bottom of the pan and cover for about 1-2 minutes. Add the butter and incorporate into the sauce.

Taste of seasoning and serve the broccolini as the bed under the pork chops. Drizzle some of white wine butter sauce of the chops.
