Raspberry French Toast (Microwave Mugs)

1 egg

1 teaspoons maple syrup

1 teaspoons heavy cream

1 cup brioche or challah bread diced


In a ceramic coffee mug, place in egg, maple syrup, cinnamon, cream and salt. Using a small whisk or fork, blend mixture. Toss in bread and mix to combine. Place a piece of plastic wrap over mug and microwave for 2 to 2:30. Careful! Contents are hot. Let sit at room temperature for 5 minutes then use a knife to cut around French toast. Slice and plate, top with whipped cream, powdered sugar, and a small drizzle of syrup.
