Red Potato Crusted Salmon

When it comes to entertaining, I stick to the rule that the simpler, the better. So many things go into entertaining guests in your home, that I believe your menu should always be tried and true recipes. Elegant recipes that will wow your guests can be super simplistic, like this recipe which takes salmon and dresses it with thinly sliced potatoes and some fresh thyme. You and your guests will love this recipe!

ingredients

2 pounds whole salmon fillet

2 teaspoons kosher or sea salt

1 teaspoons ground mustard

2 medium red potatoes thinly sliced

4 tablespoons extra virgin olive oil

2 tablespoons fresh lemon juice

Step 1

Heat the oven to 450 degrees.

Step 2

Place wax paper on a cookie sheet and place salmon on the sheet, skin side down. Add the salt, pepper, garlic powder and ground mustard on the salmon.

Step 3

Take your thinly sliced potatoes and layer them on top of the salmon. Add some extra sprinkles of salt and pepper and drizzle generously with extra virgin olive oil and thyme sprigs.

Step 4

Roast in the oven for 20-30 minutes, uncovered. Let salmon rest and squeeze fresh lemon juice before serving.
