6 tablespoons olive oil

2 tablespoons fresh lemon juice

0.5 teaspoons fresh chopped garlic

1 teaspoons stone ground mustard

1 teaspoons red wine vinegar

0.5 teaspoons dried oregano

1 teaspoons chopped fresh mint

2 cup fresh romaine lettuce torn into pieces

3 large plum tomatoes seeded, coarsely chopped

0.75 cucumber peeled, seeded, coarsely chopped

3 pepperoncini diced

0.5 red onion peeled, chopped

1 roasted red pepper coarsely chopped

0.5 cup pitted olives (preferably brine-cured), coarsely chopped

directions

Whisk the olive oil, lemon juice, garlic, vinegar, oregano and mint together until blended. Season to taste with salt and freshly ground black pepper. (Can be prepared 3 hours ahead. Let stand at room temperature. Rewhisk before using.) 2 Combine the romaine, tomatoes, cucumber, pepperoncini, red onion, bell pepper, and olives in a bowl. Toss with dressing. Sprinkle cheese over and serve. Grind some extra fresh black pepper.
