  • 2 pounds boneless, skinless turkey thighs, cubed
  • 1 medium onion, diced
  • 15 ounces can of coconut milk
  • 1/4 cup tomato paste
  • 2 tablespoons grated ginger root
  • 4 garlic cloves, grated
  • 1 tablespoons garam masala
  • 1 tablespoons curry powder
  • 1 tablespoons corriander
  • 1 tablespoons cumin
  • 1 tablespoons cornstarch
  • 1 teaspoons salt
  • 1/2 teaspoons black pepper
  • 1/2 teaspoons cayenne pepper
  • 1/4 cup cilantro, minced for garnish

directions

Directions:

Place cubed turkey thighs and diced onion in the bottom of a slow cooker. In a medium bowl, whisk together coconut milk, tomato paste, ginger, garlic, spices, cornstarch, salt and cayenne. Pour mixture over the chicken and onion and stir well. Cook high for 4 hours. Serve with basmati rice and cucumber sauce on the side. Garnish with cilantro.
