Soy Lime Ginger Fried Chicken


This is a Philippine-style recipe for fried chicken marinated in soy sauce and citrus juice. The skin becomes both crispy and a little sticky with the sugars in the soy sauce and lime juice and is a great way to make chicken wings for game day too! If you don’t want to fry your chicken, try baking it in the oven for a lighter way to enjoy this delicious recipe.

  • 2 pounds chicken drumsticks
  • 2 cup soy sauce
  • 3/4 cup fresh lime juice
  • 3 teaspoons kosher salt
  • fresh cracked black pepper
  • 6 thin slices of fresh ginger
  • 1 cup vegetable oil

directions

Step 1

Take all the ingredients and whisk the marinade in a large mixing bowl. Then add the chicken drumsticks and toss with the marinade.

Step 2

Cover the mixing bowl with the chicken and marinade with plastic wrap and set in the refrigerator for at least 25-30 minutes.

Step 3

Heat oil in a deep pot on high heat or use a deep fryer. If you have a thermometer, heat the oil until 375 degrees, or until you see the oil glistening in the pot.

Step 4

Start to fry the chicken in small batches until they are crispy and have the internal temperature of 165 degrees. Serve with hot white rice and hot sauce.
