Spicy Sausage & Seafood Pasta

Seafood pasta is one of my most favorite Italian-style dishes.
Tender and sweet bits of mussels, clams, shrimp and squid mimic the tenderness of the fluffy wide pasta it sits on.
The broth consisting of nothing more than olive oil, clam juice and white wine, this dish only sounds ultra expensive (it is when you order it in a restaurant). But when made at home, you’ll see just how affordable and delicious you can make it yourself!
Spicy Sausage & Seafood Pasta
Ingredients
1 lb of pasta (Use your favorite kind)
3-4 tablespoons of extra virgin olive oil
1/2 lb of Hot Italian sausage
1 large leek – washed and sliced
3 cloves of garlic – minced
1 teaspoon of dried (or fresh) thyme
1 teaspoon of Kosher salt
1 lb of frozen seafood mix
8 oz of clam juice
3 tablespoons of white wine
Juice of 1 lemon
1 bunch of parsley – chopped
Instructions
Cook the pasta in boiling hot salted water until al dente.
Heat a large saute pan on medium-high heat with olive oil.
Saute the Italian sausage until slightly brown. Add the garlic and leeks and saute for about 2 minutes.
Add the seafood mix and toss gently, adding the thyme and salt.
Add the clam juice, white wine and lemon juice, toss then add the pasta.
Toss lightly and let the ingredients incorporate, bringing in up to a simmer. Once the sauce has started to simmer, bring it down to low and toss in the parsley.
Serve with lemon wedge and Parmesan cheese.
