Superhero Power Bites

This back to school treat is a perfect power-boost that your kids need to get through a hectic day! These bites are loaded with protein, antioxidants, and nutritional boosts that will give them the energy needed to conquer any superhero feats!

0.5 cup old fashioned oats

0.67 cup toasted coconut flakes

0.5 cup natural peanut butter

0.5 cup ground flaxseed

0.5 cup cacao nibs

0.5 cup dried cranberries

0.33 cup honey

1 tablespoons chia seeds

1 tablespoons hemp seeds

1 teaspoons vanilla extract

Step 1:

Stir all ingredients together in a medium bowl until thoroughly mixed. Cover and let chill in the refrigerator for half an hour. Once chilled, roll into balls of whatever size you would like. (Mine were about 1" in diameter.) Store in an airtight container and keep refrigerated for up to 1 week. *If the mixture tends to be too dry, add a touch more honey.
