- 3 cup plain muffin mix
- 1 cup mashed sweet potatoes
- 1 teaspoons cinnamon
- 1 teaspoons nutmeg
- 4 tablespoons sugar
- 1/4 cup milk
- 2 eggs
directions
Preheat oven to 400 degrees. Mix all dry ingredients. Add the mashed sweet potatoes, milk, and eggs to the dry mix. Mix thoroughly for 2 to 3 minutes. Spray muffin pan with non-stick cooking spray. Pour muffin mix into pan. Bake for 15 to 20 minutes. Let cool and ready to serve.
