Voigt’s Herbst Bot Boi (Voigt ‘s Harvest Potpourri Stew)

My family arrived in the States during a time when Americans weren’t very fond of German immigrants. Many tried to hide that they were German. My great-great grandparents traveled from Heide, a town in Schleswig-Holstein Germany to San Francisco where they opened a grocery store. My great-grandpa, Karl Wilhelm Voigt, was born in CA as a first generation American. The family moved when Karl was young to South Dakota & bought a farm & another grocery store which my great grandfather later ran. Our family has always been proud of our German ancestry. Passed down for generations this dish is one I remember my grandmother making every harvest time with veggies picked from her own garden. Over the yrs this recipe evolved & simplified; while the ingredients have changed ever so slightly, the taste & quality have not. The dish is like a thick stew with chicken, veggies & a noodle that is made from an unexpected ingredient. As my great-grandpa would say, Mahlzeit!

2 cup flour Bot Boi noodle

0.5 teaspoons baking powder Bot Boi noodle

0.5 teaspoons salt Bot Boi noodle

1 tablespoons Spry Bot Boi noodle

0.5 cup water Bot Boi noodle

1 beaten egg Bot Boi noodle

1 diced Vidalia onion Voigt's Herbst Bot Boi

1 rotisserie chicken Voigt's Herbst Bot Boi

4 cup chicken stock Voigt's Herbst Bot Boi

4 cup vegetable stock Voigt's Herbst Bot Boi

2 cup water Voigt's Herbst Bot Boi

0.5 cup apple juice Voigt's Herbst Bot Boi

4 ribs of celery uncut Voigt's Herbst Bot Boi

2 cloves of garlic Voigt's Herbst Bot Boi

2 teaspoons dried sweet basil Voigt's Herbst Bot Boi

2 teaspoons dill weed Voigt's Herbst Bot Boi

1 teaspoons dried chives Voigt's Herbst Bot Boi

6 carrots - sliced Voigt's Herbst Bot Boi

4 ears fresh corn - cut off cob Voigt's Herbst Bot Boi

0.5 cup fresh shelled peas Voigt's Herbst Bot Boi

Step 1 - Bot Boi Noodle

Stir in water. Do not use all the flour. Roll out about an inch wide and drop into boiling chicken broth . **Since the noodles were time consuming to make and so similar to tortillas my uncle had the idea to substitute them. Sure enough the taste was very similar.

** (This recipe will make a very large batch of stew so be prepared to feed lots of family and friends or freeze remainder for a later day). Place onions in the bottom of a dutch oven or large soup pot on medium.

Step 2 - Voigt's Herbst Bot Boi (Voigt 's Harvest Potpourri Stew)

Pour the rotisserie chicken drippings to cover the onions. Stir until coated and simmer until the onions become softened.

Pull all the meat off the chicken and place in a separate bowl. Remove and discard the skin. Using a meat cleaver, slice the bones in half to expose the marrow . At this point you can add them directly if yo u want to fish them out later or you can put them in a large tea strainer or cheesecloth and put them into the pot.

Add the liquids and bring to a boil. Once boiling, cover the pot and simmer for 30 minutes. Remove the bones and carcass. I f needed skim and discard fat off the top.

Add the celery ribs, garlic, salt and pepper, sweet basil, dill weed, and chives into the soup and boil. Reduce heat. Cover and simmer on medium-low for 10 minutes.

While the soup is cooking begin to prepare the noodles. Take out 8-10 large tortillas. Spread a little Wondra flour on a flat surface and lay one tortilla on top of it. Sprinkle more Wondra on top of that tortilla and stack another one on top. Repeat until all tortillas are stacked and dusted with Wondra.

Using a sharp knife cut the tortillas into rectangular noodles.

Remove the celery and garlic from the soup and discard. Bring the soup back up to a boil and add in the noodles slowly pulling each one apart before dropping it into the boiling liquid. Stir to prevent sticking.

Add in carrots and all the chicken meat. Cover the pot and turn heat down to simmer for 15-20 minutes.The soup will thicken like gravy. Keep checking to make sure bottom isn't sticking and stir frequently.

Add in peas and corn and continue to simmer for 5 -10 more minutes. Serve and enjoy!
