Step 1:
Whip heavy cream until almost stiff. Add sugar to taste. If adding cocoa, I make it a little sweeter at first. Beat until stiff peaks form. To make it chocolatey, add cocoa, about a tablespoon. Fold in gently with spatula. Frost cake or cupcakes. Chill until served.
