Amaranth with Cilantro and Lime

Amaranth is a unique, gluten-free cereal. Serve it up with cilantro-lime sauce and enjoy its special flavor.

1.5 cup amaranth rinsed under cold water

2.75 cup water

1 teaspoons kosher salt

1 cup fresh cilantro loosely packed

0.5 cup white onion chopped

0.25 cup scallions chopped

1.5 tablespoons fresh jalapeño chopped, including seeds

1.5 tablespoons fresh lime juice

1 teaspoons olive oil

0.5 teaspoons kosher salt

Cooking Amaranth

In a 1-1/2 to 2-quart heavy saucepan, bring amaranth, water and 1 teaspoon of salt to a boil. Reduce heat to low and cover pan with tight-fitting lid. Cook 20-25 minutes until the amaranth is tender. Remove pan from heat and let stand, covered with a towel over the pot and lid replaced tightly, for 5 minutes without opening the pot. Remove lid and fluff amaranth with a fork.

Purée

In a blender or food processor, purée cilantro, onion, scallion, jalapeño, lime juice, olive oil, and remaining 1/2 teaspoon of salt. (If necessary, add 1-2 Tablespoons of water to facilitate blending).

Assembly

Add cilantro mixture to the amaranth and fluff with a fork until well combined.
