Apple Pie (Jablecznik)

Best tasting apple pie out there with lots of apples 🙂

6 pounds Granny Smith Apples

3.33 cup All Purpose Flour

3 cup Sugar

5 Eggs

2 Vanilla Sugar packets

1.75 cup Butter

2 teaspoons Vanilla Extract

2 tablespoons Sour Cream

1 teaspoons Backing Powder

1 teaspoons Cinnamon


Step 1 prep

Melt the butter on low heat and set aside for cooling.

Step 2 making the pie

Mix together flour, 1 3/4 cups of sugar, 1 teaspoon of the baking powder, 1 vanilla sugar packet, 2 tablespoons of sour cream, cooled melted butter and 5 egg yolks. Do not throw away the egg whites, they will be used later. Mix well. Once the pie is consistent, split into two identical pieces. Use the first piece to cover your baking tray, laying it out with your fingers cover the bottom and sides. Split the second half into smaller pieces and shape into spheres then cover with plastic food wrap and put in a freezer for 30 minutes.

Step 3 making the apple filling

Peel the apples and grate on the largest eyes of the grater. Whip the egg whites. To the grated apples add 1 vanilla sugar packet, 1 1/4 cups of sugar, 1 teaspoon of cinnamon, 2 teaspoons of vanilla extract, and whipped egg whites. Mix well with a spoon and let stand for roughly 30 minutes or until the pie spheres harden to a point where they can be grated.

Step 4 combine

Pour the apple filling onto the pie and using a spoon level out. Next take out the chilled pie from the freezer and grate, using the largest eyes of the grater, on top of the apple filling covering it entirely.

Step 5 bake

Pre-heat the oven to 400F. Bake the pie for 40 minutes then take it out and let it cool. Best served cold. Enjoy!
