  • 1/2 cup sugar
  • 1/2 cup kosher salt
  • 1 bay leaf
  • 2 cloves garlic, smashed
  • 1 teaspoons black pepper, coarsely ground

Combine all ingredients in a large bowl. Add meat to the brine; let it soak in the refrigerator for up to 12 hours. Then prepare meat the way you normally would.
