Blackberry Lambrusco Artisan Toast
I received all my inspiration for cooking from my Italian Grandmother. I never realized how much I really enjoyed cooking until after my Grandmother was gone. I remember sitting and watching her for hours in the kitchen kneading bread, rolling pasta dough, by hand or just baking a cake from homemade scratch ingredients. Over the years, all us Grandchildren sit and talk about how she would just take turns and call a family member and ask us what type of cake we would want. It didn’t have to be a special occasion. She just loved to make everyone happy. She found a way through everyone’s tummy. I remember my Grandmother making a red wine sauce that she used to pour over our French Toast. I am pretty sure it was homemade wine that my Grandpa used to make. Since I do not have homemade wine available I decided to create a recipe using Lambrusco Wine, made from the Italian Lambrusco Grapes.

1 cup Lambrusco Wine
0.25 cup brown sugar
1 tablespoons butter
1 cup blackberries, fresh
0.13 teaspoons salt
2 large eggs
4 thick slices, Artisan Bread
directions
1. In medium sauce pan over medium to low temperature, add wine and sugar. Stir until sugar is dissolved. Add butter, stir then add blackberries and salt to taste. Simmer to reduce liquid in half. 2. In small bowl, beat eggs 3. On medium, heat saute pan. Lightly grease with cooking oil and slab of butter. 4. Dip bread into beaten egg, covering both sides. 5. Place in saute pan, season with salt and cook until lightly browned on both sides. 6. Drizzle with blackberry syrup, top with whipped cream. Note: Recipe makes 4 pieces of French Toast and serves 2 people.
