Cinnamon-Saucy Apple Pecan Crisp

This recipe is a combination of wonderful ingredients that I enjoy! So delicious, I could eat the entire pan!

0.25 cup all purpose flour

0.75 cup chopped pecans divided

0.5 cup old fashioned oats

1.25 cup packed brown sugar divided

2.25 teaspoons roasted Saigon cinnamon divided

0.75 cup melted butter divided

2.5 cup vanilla ice cream divided

0.13 teaspoons cayenne pepper

4 medium-sized MacIntosh Apples cored, peeled and sliced

Step 1

Preheat oven to 350 degrees F.

Step 2

In a medium bowl, combine flour, 1/4 cup pecans, oats, 1/4 cup brown sugar and 1/4 teaspoon cinnamon. Stir in 2 tablespoons of the melted butter.

Step 3

In a one quart saucepan, stir 1/2 cup melted butter, 1 cup ice cream, remaining 1 cup brown sugar, remaining 2 teaspoons cinnamon and cayenne pepper. Set mixture over medium heat. Bring to a boil. Lower heat to medium Cook and stir for 3 minutes. Remove from heat and set aside.

Step 4

Place remaining 2 tablespoons butter in a 9-inch non-stick oven proof skillet over medium heat. Add apples. Cook and stir until apples soften, about 5 minutes. Remove from heat. Reserve 1/2 cup sauce for topping. Stir remaining sauce and 1/4 cup pecans into apples. Sprinkle with crumbs.

Step 5

Bake at 350 degrees F. for 25 minutes.

Step 6

Allow to cool for 10 minutes. Using a spatula, place each portion on a dessert plate. Top each with 1/4 cup scoop of the ice cream. Drizzle with remaining sauce. Sprinkle with remaining pecans.
