- Polenta Ingredients
- 1 cup cornmeal
- 2 cup water, will add another 1/2 cup during cooking
- 1-1/2 cup milk
- 4 tablespoons butter
- 1-1/2 teaspoons salt
- 1/4 teaspoons pepper
- Cod mixture ingredients
- 1 pounds Cod, cut into chunks
- 1 tablespoons aji panca
- 3 tablespoons canned tomatoes
- 2 tablespoons cilantro
- 1/2 red onion
- 1 sweet banana pepper
- 2 tablespoons capers
- 1-1/2 tablespoons raisins
- juice from 1/2 a lime

Polenta
Add water to pot. Add milk to pot. Add salt & pepper. Bring to a boil. Once boiling, add cornmeal to the mixture (whisk while adding). Cover & cook for 30mins (stir every 5-10 mins). Add water if necessary along the way if polenta is not creamy enough. Add in a pinch of salt. Add in butter & whisk.
Cod Mixture
Slice red onion and put into a bowl. Slice banana pepper & add to same bowl. Slice up cilantro. Cut cod into chunks. In a large pan, add oil & set to medium to high heat. Add pepper & onion mix. Bring heat down to medium. Add a pinch of salt & cook 2-5mins. Add aji panca paste. Add canned tomatoes & cook 2mins. Add capers, raisins & cilantro and mix together. Add chunks of cod. Add 1/2 cup of water (enough to cover). Bring heat up & let simmer for 10mins uncovered. Add juice from 1/2 a lime. Plate polenta in the bottom & cod mix on the top.
