NOTE: Brine the turkey at least 24 hours before cooking; if frozen, remove from freezer 48 hours before brining.
9:00am
- Bake yams for 1 hour (Smashed Yams with Maple Syrup)

- Prep Gratin of Spinach and Cheddar.
10:00am
- Put water on to boil (Creamy Garlic Mashed Potatoes).

- Cube potatoes/ put in pot of boiling water (Creamy Garlic Mashed Potatoes).
- Remove yams from oven (Smashed Yams with Maple Syrup).
- Put gratin in to bake (Gratin of Spinach and Cheddar).
- Prep cranberry sauce (Easy, Breezy Cranberry Sauce).
10:20am
- Remove gratin from oven; set aside until ready to reheat and serve (Gratin of Spinach and Cheddar).
- Put cranberry sauce in oven (Easy, Breezy Cranberry Sauce).
- Finish preparing yams for the oven (Smashed Yams with Maple Syrup).
- Finish preparing mashed potatoes; set aside until ready to reheat and serve (Creamy Garlic Mashed Potatoes).
11:20am
- Remove cranberry sauce from oven (Easy, Breezy Cranberry Sauce).
- Finish cranberry prep and put in refrigerator (Easy, Breezy Cranberry Sauce).
- Put yams in oven (Smashed Yams with Maple Syrup).
11:35am
- Tend to yams; broil 2-3 minutes; set aside until ready to reheat and serve (Smashed Yams with Maple Syrup).
11:45am
- Put bacon for galettes into oven (Sweet Potato Galettes with Sage Crème Fraiche).
11: 57am
- Remove bacon from oven; cool (Sweet Potato Galettes with Sage Crème Fraiche).
- Put yams in oven (Sweet Potato Galettes with Sage Crème Fraiche).
- Prepare stuffing (Apple, Cornbread and Sausage Stuffing).
12:40pm

- Resume preparing stuffing (Apple, Cornbread and Sausage Stuffing).
1:15pm
- Prepare turkey with stuffing (Brined and Roasted Thanksgiving Turkey).

1:45pm
- Put water on to boil (Green Beans with Persimmon and Toasted Almonds).
- Prepare green beans up to final assembly step (Green Beans with Persimmon and Toasted Almonds).
- Prepare batter (Sweet Potato Galettes with Sage Crème Fraiche).
2:30pm
- Prepare tiramisu (Pumpkin-Gingersnap Tiramisu).
3:00pm
- Chill tiramisu in refrigerator (Pumpkin-Gingersnap Tiramisu).
5:00pm
- Remove turkey from oven – see chart in recipe. (Brined and Roasted Thanksgiving Turkey).
- Reheat hot dishes to serve (Green Beans with Persimmon and Toasted Almonds, Smashed Yams with Maple Syrup, Creamy Garlic Mashed Potatoes and Gratin of Spinach and Cheddar).
- Make pan gravy (Pan Gravy with Bourbon).
5:30pm
- Cook galettes and serve immediately (Sweet Potato Galettes with Sage Crème Fraiche).
