Just because you’re living the dorm life doesn’t mean you can’t get a little more creative with your cuisine. Equipped with nothing more than a Kenmore microwave, Ramen noodles and a few other ingredients, you can elevate the classic staple of student life and give it a healthier spin.
Healthy Microwave Ramen
Ingredients:
1 package instant ramen noodles
Water
1 teaspoon vegetable oil
1 teaspoon soy sauce
1/4 teaspoon salt
Fresh cracked pepper
1/4 cup thawed peas, corn, carrot mix
1 teaspoon lemon juice
Directions:
Place dry Ramen noodles in a microwave safe bowl and add water. Cover with plastic wrap and microwave for 3 1/2 minutes.
Drain the noodles and return to the bowl.
Add vegetables. For our recipe we used frozen peas, carrots and corn mix.
Add salt and pepper, soy sauce, olive oil and lemon juice. Mix.
Microwave for one minute.
Serve.
