ingredients
- 1 tablespoons veggie oil
- 1-1/2 cup seared peeled & deveined shrimp, marinate in chili sauce, honey, garlic & veggie oil. Let sit for 24hrs
- salt, to taste
- 2 cup charred corn
- 2 tablespoons diced red onion
- 1/2 cup black beans
- 2 tablespoons diced red pepper
- 2 tablespoons roasted garlic mayo
- pinch of salt
- 1/4 cup fresh cilantro
- 1/4 cup cotija cheese
- 1-1/2 teaspoons chili pequin
- 1-1/2 tablespoons fresh lime juice
directions
Sear marinated shrimp in saut pan on high heat. After it carmelizes, remove from heat & place in a bowl.
To make the salad; mix together corn, red onion, black beans, red pepper, roasted garlic mayo, pinch of salt & cilantro in a bowl. Add cotija cheese, chili pequin & fresh lime juice.
Fill fresh tortillas with garlic shrimp & top with corn elote salad. Spoon of fresh avocado on top seasoned with salt. Top with blanched onions
