ingredients

1 tablespoons veggie oil

1.5 cup seared peeled & deveined shrimp marinate in chili sauce, honey, garlic & veggie oil. Let sit for 24hrs

2 cup charred corn

2 tablespoons diced red onion

0.5 cup black beans

2 tablespoons diced red pepper

2 tablespoons roasted garlic mayo

0.25 cup fresh cilantro

0.25 cup cotija cheese

1.5 teaspoons chili pequin

1.5 tablespoons fresh lime juice

directions

Sear marinated shrimp in saut pan on high heat. After it carmelizes, remove from heat & place in a bowl.

To make the salad; mix together corn, red onion, black beans, red pepper, roasted garlic mayo, pinch of salt & cilantro in a bowl. Add cotija cheese, chili pequin & fresh lime juice.

Fill fresh tortillas with garlic shrimp & top with corn elote salad. Spoon of fresh avocado on top seasoned with salt. Top with blanched onions
