Grilled Saffron Potatoes

I’m preaching to the choir when I say say, "It’s grilling season baby"! However and whatever season it is I sometimes get into a potato rut. And think of those starchy spuds in only a few applications. But here is a fresh, tasty alternative with my new favorite condiment Just Mayo by Hampton Creek…eat more spuds!

5 yukon gold potatoes

2 garlic clove minced

1 teaspoons saffron

0.25 cup Just Mayo

1 tablespoons Chives sliced thin

1 teaspoons lemon zest

2 tablespoons grated parmesan cheese

0.5 cup grapeseed oil slightly warm

Directions

Super quick: warm the oil and saffron in the microwave 30 seconds. Will help permeate the the oil with the saffron qualities. Drench your spud wedges in the infused oil, coat well. sprinkle with lemon zest and garlic. "marinate 15 min" To the grill - medium heat, grill those spuds. after tender and soft on the interior, dredge while warm in Just Mayo, Chives and Parmesan. This is the part when your mouth is watering, and you go buy some taters and Just Mayo
