What inspired this recipe was my mom. Cooking is her hobby and passion. Of all the 100s of recipes she has created this has been one of our family’s favorites. She has been making this recipe for over 30 years now. She would always make this recipe for our family meals & now I make it for my family & bring it to family get togethers & church picnics. While growing up we always had a large veggie garden. In it we always grew zucchini. This is just one of many recipes she created to use the large quantities of zucchinis we would grow. This recipe is special to me because it reminds me of those summers growing up & picking the fresh zucchini & other vegetables from our garden & making delicious meals for our family.

- 4 small zucchinis
- 1/2 onion
- 1 red pepper
- 8 ounces package long grain and wild rice
- 1/2 cup chopped ham
- 8 ounces pkg mozzarella cheese
- 2 tablespoons oil

Step 1:
Hollow out zucchini . Cut zucchini into cubes. (Save the zucchini shell to put ingredients back into).
Step 2:
Dice onion and slice red pepper. Cook all the vegetables on the grill or in oil on the skillet until tender. Add ham to vegetable mixture the last five minutes of cooking. Cook rice according to directions.
Step 3:
Combine rice and vegetable mixture. Put the mixture into the zucchini shell and top with mozzarella cheese. Cook in microwave approx five minutes until cheese is melted.
