Ricotta Fritters

Ariel Bagadiong, Executive Chef of the Dana Hotel and Spa, shares his recipe for Ricotta Fritters.

5 cup all purpose flour

1 cup granulated sugar

4 tablespoons baking powder

1 teaspoons salt

2 cup fresh ricotta cheese

2 cup milk

6 whole eggs

5 ounces melted butter

4 teaspoons vanilla paste


Combine all the dry ingredients and sift. Combine milk, eggs, melted butter, and vanilla extract and mix until thoroughly incorporated. Add all the dry ingredients and whisk to combine. Using a small scoop, fry batter at 350-375 until golden. Dip the scoop into the fryer oil so that the batter will release easier and has a nice round shape to them.
