Santorini Summer Salad

You don’t have to travel to the islands to sample a taste of this Mediterranean delight! This salad is loaded with healthy veggies and topped with a light vinaigrette. Happy Eating!

0.5 zucchini cut into thin strips

1 cup kale

1 handful garbanzo beans

1 handful cherry tomatoes halved

1 tablespoons chopped pitted kalamata olives

2 small pepperoncini

0.25 cup sliced cucumbers

0.5 cup grilled chicken breast, cut into strips

1 teaspoons feta cheese, crumbled

1 tablespoons extra virgin olive oil

1 teaspoons red wine vinegar

Directions:

This is a composed salad so it's best to layer all the ingredients like the picture shown. Have fun with this lovely salad and the simplicity of the dressing is to just drizzle the oil and vinegar on top. Season the salad with the salt and pepper. Serve immediately.
