- 5 medium apples
- 1/2 teaspoons unsalted butter
- 1 leek, finely chopped
- 1/2 pork sausage
- 1/4 whole wheat baguette, cut into 1/2-inch cubes
- 3 tablespoons fresh parsley, finely chopped
- 1-1/2 teaspoons fresh sage, finely chopped

Prep Bread
Toast the bread in a preheated 350 F oven.
Prep Apples
Cut out a large well into each of 4 apples being careful not to cut all the way through. Peel, core and chop the remaining apple.
Prepare Your Stuffing
Melt the butter in a medium saut pan. Add the leek and cook until softened. Stir in the pork sausage, breaking it up with a spoon. Cook for a few minutes. Stir in the chopped apple and cook for a few minutes more. Stir in the bread cubes, parsley and sage. Season with salt and pepper.
Stuff and Bake the Apples
Fill the hollows of the apples with the sausage stuffing. Set in a medium baking dish. Pour in apple cider and cover with a lid or aluminum foil. Bake for 30-40 minutes or until the apples are tender. Serve warm.
