- 1 pounds dates, dried
- 4 ounces cream cheese, room temperature
- 4 ounces smoked gouda, grated
- 1/4 cup sliced almonds, toasted
- 8 ounces smoked almonds
- olive oil
- salt and pepper
Preheat oven to 300 degrees Fahrenheit. Take the dates and soak them in warm water for 10 mins to make them more pliable. In a medium bowl, stir together the cream cheese and smoked gouda, then set aside. Drain the dates and split them open. Drizzle about 1 Tablespoon of Olive oil into a 13"x9" baking dish, and set aside. Take each date and stuff with an almond and a small spoonful of the cheese mixture. Add the stuffed dates in a single layer to the prepared baking dish. Bake for 15 minutes then remove from oven and immediately drizzle with honey, salt, pepper to taste, and the toasted sliced almonds. These can be served with a lovely sparkling wine.
